Omelette à la Mancelle (Omelet Mancelle Style)

Ingredients
- 1 spoonful chestnuts, cooked in consommé (broth), broken
- 1 spoonful julienne (fine matchstick cut) of partridge breast fillet, short-cut
- 1 spoonful game glace (reduced game stock)
- 1 fillet game glace (reduced game stock), for coating the length of the omelet
- 1 cordon (ribbon/border) demi-glace (half-glaze) sauce with game fumet (concentrated game stock)
Instructions
- Prepare the omelet filling: combine one spoonful of broken chestnuts (cooked in consommé) with one spoonful of short-cut julienne of partridge breast fillet, binding them together with one spoonful of game glace.
- Fold this filling into the omelet. Once folded, arrange a fillet (line) of game glace running lengthwise down the center of the omelet. Surround the entire omelet with a fine cordon (border) of demi-glace sauce enriched with game fumet.
