Herring Fillets with Herb Mayonnaise

  1. Prepare whole smoked herring fillets by removing the skin and desalting them in milk if necessary. Trim and arrange them on the serving plate.
  2. Prepare the sauce: combine mayonnaise with an equal volume of herring roe purée (laitances). Thin with vinegar to achieve the desired consistency. Season with a pinch of cayenne pepper.
  3. Finely mince equal quantities of onion, parsley, chervil, celery, chives, and tarragon. Fold these herbs into the sauce to incorporate them evenly.
  4. Mask (napper) the arranged herring fillets generously with the herb-seasoned mayonnaise and serve.
