Canapés City

Ingredients
- 125 grams fresh butter, softened
- 60 grams fresh Gruyère cheese, grated
- 60 grams Parmesan cheese, grated
- 0.5 teaspoon heavy cream
- fine salt
- cayenne pepper
- 2 thin slices Lyon sausage
- 2 thin slices Gruyère cheese
Instructions
- Blend the softened fresh butter with the grated Gruyère and Parmesan cheeses. Work in the heavy cream, fine salt, and a pinch of cayenne pepper until you have a smooth compound butter (appareil).
- Form the canapés into round shapes. Spread a thick layer of this cheese butter mixture onto each round.
- Top each canapé with two semi-circular pieces: one cut from a very thin slice of Lyon sausage (saucisson de Lyon), the other from a very thin slice of Gruyère cheese, positioned as two half-circles representing the size of the canapé.
