Instructions

  1. Blend the softened fresh butter with the grated Gruyère and Parmesan cheeses. Work in the heavy cream, fine salt, and a pinch of cayenne pepper until you have a smooth compound butter (appareil).
  2. Form the canapés into round shapes. Spread a thick layer of this cheese butter mixture onto each round.
  3. Top each canapé with two semi-circular pieces: one cut from a very thin slice of Lyon sausage (saucisson de Lyon), the other from a very thin slice of Gruyère cheese, positioned as two half-circles representing the size of the canapé.
