Farmer's Soup

Ingredients
- 1 carrot
- 1 turnip
- 3 leek whites
- 1/2 onion
- 2 tablespoons butter
- 1.5 liters consommé ordinaire (ordinary stock or clear broth)
- 125 grams heart of head cabbage
- thin slices of housemade bread
Instructions
- Slice the carrot, turnip, leek whites, and onion into small dice (paysanne cut). Sweat them gently in butter in a heavy-bottomed pot until softened but not colored.
- Pour in the consommé ordinaire and bring to a boil. Add the thinly sliced cabbage heart and continue cooking gently until all vegetables are tender.
- Serve the soup in bowls with thin slices of housemade bread placed in each portion.
