Farmer's Soup

Instructions

  1. Slice the carrot, turnip, leek whites, and onion into small dice (paysanne cut). Sweat them gently in butter in a heavy-bottomed pot until softened but not colored.
  2. Pour in the consommé ordinaire and bring to a boil. Add the thinly sliced cabbage heart and continue cooking gently until all vegetables are tender.
  3. Serve the soup in bowls with thin slices of housemade bread placed in each portion.
