Instructions

  1. Toast the bread slices. Spread a layer of mustard butter (beurre moutardé) on each slice, making the butter layer half as thick as the bread itself.
  2. Layer very thin slices of bright red salted tongue over the butter. Allow the butter to set and firm up.
  3. Using a star-shaped cookie cutter or emporte-pièce dipped in hot water, cut out star shapes from the prepared bread. Pipe a decorative fluted line of mustard butter down the center of each star using a pastry bag fitted with a fluted tip.
