Tomatoes au Naturel

Instructions

  1. Select very small tomatoes and peel them. Press the peeled tomatoes gently in a cloth to remove excess moisture. Marinate them with oil and vinegar.
  2. To finish: place a small sprig of parsley at the top of each tomato to imitate the natural stem. Using a pastry bag (cornet), pipe beurre vert (green butter) around the tomato to create the appearance of leaves.
  3. Alternatively, the tomatoes may be stuffed with a filling of your choice and finished according to standard methods.
