Portuguese Sauce

Ingredients
- 1 large onion
- 750 grams tomatoes
- 1 pinch garlic
- salt
- pepper
- 1 teaspoon sugar
- 1 tablespoon tomato essence
- sauce Tomate claire (clear tomato sauce)
- 100 milliliters glace de viande (meat glaze)
- 1 tablespoon fresh parsley
Instructions
- Mince the onion very finely. Heat oil in a heavy pot over brisk heat and sauté the onion until it begins to turn golden. Add the peeled, seeded, and crushed tomatoes, the pounded garlic, salt, pepper, and a pinch of sugar if the tomatoes are acidic.
- Cover the pot and cook gently until the sauce reaches the desired consistency. Finish the sauce by stirring in tomato essence, the necessary amount of clear tomato sauce, the melted glace de viande, and the fresh chopped parsley.
