Oysters au Gratin

  1. Open the oysters and detach them from the shell, trimming away any rough bits. Return each oyster to its concave (cup-shaped) shell.
  2. Arrange the shells on a baking sheet covered with salt, pressing them lightly into the salt to keep them upright and level.
  3. Squeeze a drop of fresh lemon juice over each oyster. Sprinkle a pinch of fried breadcrumbs (mie de pain frite) over each one.
  4. Drizzle a little melted butter over each oyster, then top each with a pea-sized knob of cold butter.
  5. Gratin (finish under high heat) either in a very hot oven or under the Salamandre (broiler).
