Consommé à la Parmesane

Ingredients
- Consommé ordinaire clair (clear ordinary consommé)
- 3 Egg yolks
- pinch Nutmeg
- 3 Egg whites
- 50 grams Flour
- 90 grams Parmesan cheese, grated
Instructions
- Crush the egg yolks in a terrine with a pinch of nutmeg. Fold in the stiffly whipped egg whites, the sifted flour, and the grated Parmesan cheese simultaneously.
- Spread the batter (appareil) onto white parchment paper placed on sheet pans, in an even layer 8 millimeters thick. Bake in a gentle oven and allow to cool completely before cutting into the desired shapes.
- Serve the Parmesan biscuits separately alongside the clear consommé.
