Consommé à la Parmesane

Instructions

  1. Crush the egg yolks in a terrine with a pinch of nutmeg. Fold in the stiffly whipped egg whites, the sifted flour, and the grated Parmesan cheese simultaneously.
  2. Spread the batter (appareil) onto white parchment paper placed on sheet pans, in an even layer 8 millimeters thick. Bake in a gentle oven and allow to cool completely before cutting into the desired shapes.
  3. Serve the Parmesan biscuits separately alongside the clear consommé.
