Lobster Croquettes

Ingredients
- lobster meat
- mushrooms
- truffles
- béchamel sauce (mother sauce of roux blanc and milk)
- red butter (beurre rouge)
- a pinch cayenne pepper
Instructions
- Prepare a salpicon (fine dice) of lobster meat, mushrooms, and truffles. Bind the mixture with a reduced béchamel sauce (a mother sauce of roux blanc and milk). Finish the liaison with red butter (beurre rouge), and season with a pinch of cayenne pepper.
- Form the mixture into oval pointed croquettes. Bread and deep-fry until golden.
- Serve with a light lobster sauce (Sauce Homard légère).
