Garlic and Fish Soup (Aïgo-Saou)

Ingredients
- 1 kg white fish, cleaned and cut into pieces
- 1 small onion, thinly sliced
- 2 tomatoes, chopped
- 3 medium potatoes, cut into small quarters
- 1 bay leaf
- 2 garlic cloves
- 1 bouquet garni herb bundle (3 parsley branches and a celery fragment)
- 25 grams salt
- 1 pinch pepper
- 1.75 liters water
Instructions
- Combine in a pot: cleaned white fish cut into pieces, thinly sliced small onion, chopped tomatoes, potatoes cut into small quarters, bay leaf, garlic cloves, and a bouquet garni (herb bundle) composed of parsley branches and celery. Add salt, pepper, and water.
- Bring to a vigorous boil and cook for 20 minutes.
