Omelette à la Lyonnaise

Ingredients
- 1/2 onion
- butter
- eggs
- 1 pinch parsley, chopped
- salt and pepper
Instructions
- Slice the onion very finely.
- Cook it in butter in a pan over moderate heat, letting it color lightly and develop sweetness.
- Beat the eggs with a generous pinch of chopped parsley, salt, and pepper.
- Add the softened onion to the egg mixture and make the omelette as usual—folding it onto a warm plate when the top is set but still slightly creamy.
