To Know When Bread Is Sufficiently Baked

Instructions

  1. Judge a whole loaf by these signs taken together: the surface uniformly browned, the loaf everywhere firm to the touch, and the bottom crust hard. When they all hold, it is generally certain that the bread is thoroughly baked.
  2. To test bread that has been cut, or yeast-cakes, press down the crumb lightly in the centre with the thumb.
  3. If it is elastic and rises again to its place, that is proof that it is perfectly done. If the indentation remains, the heat has not sufficiently penetrated the dough to convert it into wholesome eating.
