A Nice Indian Pudding

  1. No. 1 — Stir 3 pints scalded milk and 7 spoons fine Indian meal well together while hot, then let it stand till cooled.
  2. Add 7 eggs, half a pound of raisins, 4 ounces butter, spice and sugar.
  3. Bake one and a half hours.
  4. No. 2 — Add 3 pints scalded milk to 1 pint of meal, salted, and let it cool.
  5. Add 2 eggs, 4 ounces butter, and sugar or molasses and spice as much as suffices.
  6. Bake; it will require two and a half hours.
  7. No. 3 — Salt a pint of meal and wet it with 1 quart milk, then sweeten it.
  8. Put it into a strong cloth, a brass or bell-metal vessel, or a stone or earthen pot, secured from wet.
  9. Boil 12 hours.
