Artichokes à la Grecque

  1. Select very small artichokes (poivrades). Trim them carefully and shorten the leaves. Blanch them in salted water, then refresh in cold water.
  2. Prepare a hot marinade with 1 liter of water, 1.5 deciliters of olive oil, 10 grams of salt, and the juice of 3 lemons.
  3. Season the marinade with fennel, celery, coriander seeds, peppercorns, thyme, and bay leaf, adjusting the proportions of each aromatic element according to its strength.
  4. Place the blanched artichokes in the hot marinade and cook for 20 minutes.
  5. Remove from heat and allow to cool completely in the marinade. Serve very cold, accompanied by the marinade.
