Artichokes à la Grecque

Ingredients
- 15 whole small artichokes (poivrades)
- 1 liter water
- 1.5 deciliter olive oil
- 10 grams salt
- 3 whole lemons
- fennel
- celery
- coriander seeds
- peppercorns
- thyme
- bay leaf
Instructions
- Select very small artichokes (poivrades). Trim them carefully and shorten the leaves. Blanch them in salted water, then refresh in cold water.
- Prepare a hot marinade with 1 liter of water, 1.5 deciliters of olive oil, 10 grams of salt, and the juice of 3 lemons.
- Season the marinade with fennel, celery, coriander seeds, peppercorns, thyme, and bay leaf, adjusting the proportions of each aromatic element according to its strength.
- Place the blanched artichokes in the hot marinade and cook for 20 minutes.
- Remove from heat and allow to cool completely in the marinade. Serve very cold, accompanied by the marinade.
