Fish Roe Aspic

Ingredients
- soft roe (laitances)
- white fish aspic jelly (gelée blanche de poisson)
- chervil sprigs (pluches de cerfeuil)
- capers (câpres)
- cornichons (small pickled gherkins)
Instructions
- Poach the soft roe (laitances) in white wine, then cool it under light pressure.
- Line a decorative piping mold with white fish aspic jelly (gelée blanche de poisson). Decorate the lining with chervil sprigs, capers, and fine strips of cornichon. Arrange the cooled soft roe inside the mold either standing upright or in alternating rows of thin slices interspersed with layers of aspic.
- Turn out and serve according to the standard procedure for aspics.
