To Keep Bread

Instructions

  1. Let the bread become perfectly cold, then lay it into a large earthen pan with a cover.
  2. Keep that pan free from crumbs: it should be frequently scalded, and then wiped very dry before it is used again.
  3. Give loaves which have been cut a smaller pan appropriated to them, and wipe the loose crumbs from it daily as well.
  4. Where the larder has no proper stand or frame for the purpose, raise the bread-pans from the floor by means of two flat wedges of wood, so as to allow a current of air to pass under them.
  5. The principle behind all of it: bread requires almost as much care as milk to preserve it wholesome and fresh.
