Consommé à la Grimaldi

Ingredients
- 1 liter consommé ordinaire (clear meat broth)
- 6 tablespoons tomato purée, strained through cloth
- royale ordinaire (savory custard garnish), cut into desired shapes
- celery julienne (thin matchstick strips), stewed in butter
Instructions
- Prepare a clear consommé ordinaire (meat broth clarified in the classical French manner).
- Strain the tomato purée through fine cloth to remove seeds and fibrous matter. Add 6 tablespoons of this strained purée per liter of consommé, stirring gently to incorporate.
- Prepare a royale ordinaire (a savory egg custard) and cut it into shapes of your choice — small cubes, diamonds, or other garnish forms as desired.
- Cut celery into fine julienne (thin matchsticks). Braise gently in butter until tender, then add to the consommé just before service.
