Consommé à la Grimaldi

Instructions

  1. Prepare a clear consommé ordinaire (meat broth clarified in the classical French manner).
  2. Strain the tomato purée through fine cloth to remove seeds and fibrous matter. Add 6 tablespoons of this strained purée per liter of consommé, stirring gently to incorporate.
  3. Prepare a royale ordinaire (a savory egg custard) and cut it into shapes of your choice — small cubes, diamonds, or other garnish forms as desired.
  4. Cut celery into fine julienne (thin matchsticks). Braise gently in butter until tender, then add to the consommé just before service.
