Potage Garbure à la Paysanne

  1. Prepare the paysanne (diced vegetable garnish): stew it down completely, finish cooking with light broth, pass it through a whisk to break it down, then tighten by reduction.
  2. Cut household bread into rectangles and fry them in butter. Mask (coat) the fried bread rectangles with the reduced paysanne mixture. Sprinkle generously with grated cheese, then gratinée (finish under heat until golden and crusty), and mitonner (simmer gently) as indicated above.
  3. Serve with ordinary consommé passed separately on the side.
