  1. Prepare a clear chicken consommé (fond de cuisine base).
  2. Make the forcemeat for the quenelles by combining two parts chicken forcemeat with cream (farce de volaille à la crème), kept somewhat firm, with one part raw foie gras purée.
  3. Form small quenelles from this forcemeat and poach them à la minute (just before service).
  4. Garnish the hot consommé with the poached foie gras quenelles, asparagus tips, fine truffle julienne (julienne), and small cockscombs (crêtes de coq) that have been well blanched.
