Mosaic Eggs (Cold)

Ingredients
- white aspic (gelée blanche)
- half-egg molds
- scarlet tongue (langue écarlate)
- poached egg white
- truffles
- green beans
- poached eggs
- Russian salad (salade russe)
- dome mold
- croutons
Instructions
- Line half-egg-shaped molds with white aspic (gelée blanche). Create a mosaic pattern on the bottom of each mold by arranging small diamonds of scarlet tongue, poached egg white, truffles, and green beans.
- Place one poached egg in the center of each mold, then fill to the top with white aspic. Allow to set.
- Separately, prepare a Russian salad (salade russe) and mold it in a dome-shaped mold that has also been lined with white aspic and decorated with the same mosaic pattern of ingredients.
- At service time, unmold the Russian salad onto a serving platter. Arrange the egg molds around it. Garnish the entire dish with aspic croutons.
