Nalesnikis (Russian Hors d'Oeuvre)

Ingredients
- 250 grams fresh cheese (fromage blanc), drained and pressed if needed
- 250 grams butter, softened to a smooth paste
- salt
- pepper
- 1 whole egg
- thin crêpes (pannequet très mince), made from unsweetened batter
- frying batter, very light
Instructions
- Blend the drained fresh cheese in a terrine. Add the softened butter and mix the two elements thoroughly until well combined. Season with salt, pepper, and stir in the whole egg.
- Divide the mixture into portions averaging 60 to 10 grams each. Wrap each portion in a very thin crêpe made from unsweetened batter, giving each one a rectangular shape like that of a Cromesquis (deep-fried croquette).
- At service, dip each nalesniki in the light frying batter and plunge into hot deep fat. Drain and serve on a napkin.
