Consommé à la Portugaise (Portuguese-Style Consommé)

Ingredients

• 1 liter consommé (clear broth)
• 2 deciliters purée of raw tomatoes, well-ripened
• 1 deciliter tomato water

Instructions

1. Add to each liter of consommé 2 deciliters of purée of raw, well-ripened tomatoes and 1 deciliter of tomato water.
2. Cook covered, without allowing it to come to a rolling boil, for 20 minutes.
3. Pass through a mousseline (fine conical sieve) with very gentle pressure, and serve well chilled.
