Omelette à la Hongroise (Hungarian-Style Omelette)

  1. Cook the finely minced onion in butter until soft. Add a generous pinch of paprika and stir to combine. In a separate pan, sauté the peeled, pressed, and crushed tomato in butter until it softens and concentrates. Season both mixtures to taste.
  2. Prepare the omelette in the traditional manner. When it is nearly set, fill it with the combined onion and tomato mixture. Fold or roll the omelette onto a warm serving plate.
  3. Surround the omelette with a cordon (ring) of Sauce Hongroise (Hungarian sauce).
