Deviled Grilled Eggs

Instructions

  1. Poach the eggs, then immediately cool them in cold water. Dry them thoroughly.
  2. Dip each cooled egg in melted butter, then roll gently in fine breadcrumbs to coat evenly.
  3. Place each coated egg on a square of buttered parchment paper (papier d'office) and set on the grill. Grill over gentle heat on both sides until golden.
  4. Arrange the grilled eggs on thin toast slices. Sprinkle generously with grated cheese mixed with Cayenne pepper, then gratine in the oven until the cheese is melted and lightly browned.
  5. Serve with Diable sauce passed separately.
