Deviled Grilled Eggs

Ingredients
- poached eggs
- melted butter
- fine breadcrumbs (mie de pain)
- buttered parchment paper squares
- thin toast slices
- grated cheese
- Cayenne pepper
- Diable sauce
Instructions
- Poach the eggs, then immediately cool them in cold water. Dry them thoroughly.
- Dip each cooled egg in melted butter, then roll gently in fine breadcrumbs to coat evenly.
- Place each coated egg on a square of buttered parchment paper (papier d'office) and set on the grill. Grill over gentle heat on both sides until golden.
- Arrange the grilled eggs on thin toast slices. Sprinkle generously with grated cheese mixed with Cayenne pepper, then gratine in the oven until the cheese is melted and lightly browned.
- Serve with Diable sauce passed separately.
