Herrings à la Livonienne

Instructions

  1. Select beautiful smoked herrings. Fillet them, reserving the heads and tails.
  2. Dice the fillets and combine with equal quantities of cooked diced potatoes and diced reinette apples. Season with minced parsley, chervil, tarragon, and fennel. Dress with oil and vinegar.
  3. Arrange the salad in the shape of a herring and dress it on a plate, repositioning the reserved head and tail at each end to reconstitute the original fish shape.
