Herrings à la Livonienne

Ingredients
- smoked herrings
- equal volume cooked potatoes
- equal volume reinette apples
- parsley
- chervil
- tarragon
- fennel
- oil
- vinegar
Instructions
- Select beautiful smoked herrings. Fillet them, reserving the heads and tails.
- Dice the fillets and combine with equal quantities of cooked diced potatoes and diced reinette apples. Season with minced parsley, chervil, tarragon, and fennel. Dress with oil and vinegar.
- Arrange the salad in the shape of a herring and dress it on a plate, repositioning the reserved head and tail at each end to reconstitute the original fish shape.
