Croquettes Chasseur (Game Croquettes)

Ingredients

• Salpicon (diced cooked game bird meat)
• Mushrooms
• Truffle trimmings (parures de truffes)
• Demi-glace (reduced espagnole and stock liaison)
• Game essence (essence de gibier)

Instructions

1. Combine the diced cooked game bird meat, mushrooms, and truffle trimmings with a very thick demi-glace (reduced espagnole and stock liaison) infused with game essence. Form the mixture into rectangles and bread and fry them as croquettes.
2. Serve with demi-glace sauce infused with game essence as the accompanying sauce.
