Oysters Polish Style (Huîtres à la Polonaise)

Ingredients

- 4 grams butter
- 30 grams fine breadcrumb (mie de pain)
Instructions
- Open the oysters and trim any sharp edges. Arrange them in pairs in their concave shells, placing them on a baking sheet lined with a bed of salt to keep them level and stable.
- Heat the butter in a pan — use 4 grams per oyster. Add the fine breadcrumb (30 grams per 100 grams of butter) and fry the breadcrumb until golden and crisp. This fried breadcrumb mixture is the polonaise.
- Spoon a generous teaspoon of the polonaise mixture over each pair of oysters. Place the sheet in a hot oven for 2 minutes.
- Serve immediately.
