Oysters Polish Style (Huîtres à la Polonaise)

  1. Open the oysters and trim any sharp edges. Arrange them in pairs in their concave shells, placing them on a baking sheet lined with a bed of salt to keep them level and stable.
  2. Heat the butter in a pan — use 4 grams per oyster. Add the fine breadcrumb (30 grams per 100 grams of butter) and fry the breadcrumb until golden and crisp. This fried breadcrumb mixture is the polonaise.
  3. Spoon a generous teaspoon of the polonaise mixture over each pair of oysters. Place the sheet in a hot oven for 2 minutes.
  4. Serve immediately.
