  1. Begin by preparing a salt cod gratin. Sauté the finely sliced onion in butter until softened. Dust with flour and cook briefly. Pour in the red wine and fish cooking liquid and bring to a boil. Add the warm sliced potatoes, flaked salt cod, crushed anchovy fillets, and chopped parsley. Season generously with pepper.
  2. Spread this mixture in a dome shape on a buttered gratin dish. Sprinkle fine breadcrumbs over the top, drizzle with melted butter, and gratinée (broil in a hot oven) until golden and crisp.
  3. Arrange the fried eggs, carefully trimmed, around the gratin dome and serve.
