Eggs Benoîton (Fried)

Ingredients
- 6 eggs
- 1 large onion
- 15 grams flour
- 2 décilitres red wine
- 1 décilitre fish cooking liquid
- 2 potatoes
- 200 grams salt cod
- 3 anchovy fillets
- 1 pinch parsley
- butter
- fine breadcrumbs
- ground pepper
Instructions
- Begin by preparing a salt cod gratin. Sauté the finely sliced onion in butter until softened. Dust with flour and cook briefly. Pour in the red wine and fish cooking liquid and bring to a boil. Add the warm sliced potatoes, flaked salt cod, crushed anchovy fillets, and chopped parsley. Season generously with pepper.
- Spread this mixture in a dome shape on a buttered gratin dish. Sprinkle fine breadcrumbs over the top, drizzle with melted butter, and gratinée (broil in a hot oven) until golden and crisp.
- Arrange the fried eggs, carefully trimmed, around the gratin dome and serve.
