Omelet Brussels-Style

Instructions

  1. Braise the endives until tender, then shred them finely (ciselées). Bind the shredded endives with cream.
  2. Beat the eggs with salt and pepper. Heat butter in an omelet pan over moderate heat. Pour in the eggs and cook in the usual manner, stirring gently until just set.
  3. Fill the omelet with the creamed endives. Fold and transfer to a serving plate.
  4. Surround the omelet with a thin ribbon (cordon) of sauce Crème.
