- Chicken livers, half the weight
- Kidneys, half the weight
- Red wine, of excellent quality, in place of Madeira
Instructions
- Follow the formula given for "Kidneys sautéed with Madeira".
- Use half chicken livers and half kidneys in place of kidneys alone.
- Replace the Madeira with excellent red wine.
