Consommé à la Macdonald

Ingredients
- beef consommé (very strong)
- royale (brain purée in béchamel sauce, poached in dariole molds)
- cucumber, diced and cooked in consommé
- small ravioli filled with poultry forcemeat mixed with one-third spinach purée
Instructions
- Prepare a very strong beef consommé (fond de cuisine / cooking stock).
- Prepare the royale: Make a béchamel sauce with the brain purée, pour into dariole molds, poach gently in simmering water until set, then unmold and slice into large rounds.
- Prepare the garnish of cucumber: Cut into neat dice, cook gently in the consommé until tender, and glaze well.
- Prepare small ravioli: Combine poultry forcemeat with one-third its volume of spinach purée, fill small ravioli shapes, and poach them at the moment of service.
- To serve: Ladle the hot consommé into bowls and garnish with the royale rounds, glazed cucumber dice, and poached ravioli.
