Smitane Sauce

Ingredients
- 2 medium onions
- 2 décilitres white wine
- 1 demi-litre sour cream (crème aigre)
- a few drops lemon juice
- butter
Instructions
- Heat butter in a saucepan and gently sauté the finely chopped onions until softened. Deglaze the pan with white wine and reduce it completely over heat until the liquid is nearly evaporated.
- Add the sour cream (crème aigre) and let it simmer gently for about 5 minutes, stirring occasionally.
- Pass the sauce through a fine sieve or chinois to achieve a smooth consistency. Taste and adjust the balance of flavors—the sauce should have a distinctly tart edge. Add a few drops of fresh lemon juice if needed to heighten the acidity and brighten the flavor.
- Serve with sautéed game or braised game dishes.
