Smitane Sauce

  1. Heat butter in a saucepan and gently sauté the finely chopped onions until softened. Deglaze the pan with white wine and reduce it completely over heat until the liquid is nearly evaporated.
  2. Add the sour cream (crème aigre) and let it simmer gently for about 5 minutes, stirring occasionally.
  3. Pass the sauce through a fine sieve or chinois to achieve a smooth consistency. Taste and adjust the balance of flavors—the sauce should have a distinctly tart edge. Add a few drops of fresh lemon juice if needed to heighten the acidity and brighten the flavor.
  4. Serve with sautéed game or braised game dishes.
