  1. Prepare a classic French omelette.
  2. Fill it generously with a beautiful poached mackerel soft roe and a hazelnut-sized piece of maître-d'hôtel butter (compound butter flavored with parsley, shallot, and lemon juice).
  3. Fold or roll the omelette onto a warm plate.
  4. Surround the omelette with a spoonful of melted maître-d'hôtel butter.
