Mousseline Omelette

Ingredients

Instructions

  1. Whisk the 3 egg yolks in a bowl with half a pinch of salt and 1 tablespoon of very thick heavy cream until blended.
  2. Fold in the 3 egg whites, beaten to stiff peaks, until evenly incorporated.
  3. Pour this mixture into a wide skillet containing 30 grams of very hot butter. Over moderately high heat, shake and tilt the pan rapidly and repeatedly, drawing the edges toward the center, until the mixture is evenly set and just firmed through.
  4. Roll the omelette onto a serving plate, turn it out, and serve immediately.
