Game Croquettes

Ingredients
- game meat (any available variety)
- mushrooms
- truffles
- demi-glace (rich brown sauce, reduced)
- Sauce Poivrade claire or light game coulis
Instructions
- Prepare a salpicon (fine dice) from whatever game meats are available, combining them with mushrooms and truffes in standard proportions. Bind the mixture with demi-glace (rich brown sauce) that has been reduced to concentrate its flavor and body.
- Form the mixture into cork-shaped croquettes (bouchon).
- Serve accompanied by either a clear Poivrade sauce (pepper-based) or a light game coulis (strained reduction).
