Velouté à la Bourdaloue

Instructions

  1. Blanch the rice, refresh it, and cook it thoroughly in 1 litre of poultry consommé (consommé de volaille).
  2. Grind the cooked rice and pass it through a fine sieve (étamine). Add 5 décilitres of the same consommé to the purée.
  3. Heat the soup gently. At the moment of service, finish with a liaison (egg yolk and cream thickener) and mount with butter (monter au beurre).
  4. Garnish with the same royales (savory custard cubes) as indicated in Consommé à la Bourdaloue. (See the Consommés series for details.)
  5. Note: This soup can also be made as a cream soup (en Crème).
