Instructions

Prepare a chicken consommé lightly thickened with tapioca. Cut a foie gras royale (savory custard made from foie gras purée) into small rectangles and use as garnish. Prepare very small profiteroles (choux pastry puffs) and keep them crisp until service. Serve the consommé with the foie gras rectangles as garnish and the profiteroles on the side.
