Consommé à la Richepin

Ingredients
- beef consommé (very strong)
- abundant quenelles made from poultry farce (forcemeat)
- paupiettes of lettuce leaves, stuffed and poached
- large julienne of carrots and turnips
- chervil leaves
Instructions
- Prepare a very strong beef consommé. Prepare quenelles (poached dumplings) using a poultry forcemeat: shape them using a teaspoon and fill their centers with reduced, cold, and finely chopped poultry aspic. This is done so that after poaching, the interior of each quenelle becomes liquorous (silky and yielding). Prepare paupiettes by wrapping leafy lettuce around a filling and poaching them. Prepare a large julienne cut of carrots and turnips. Just before serving, add the quenelles, paupiettes, and julienne to the hot consommé. Garnish the top with pluches (tender leaves) of fresh chervil.
