Eggs American-Style (On the Plate)

Ingredients
- 4 thin escalopes of lobster tail, prepared American-style (queue de homard à l'Américaine)
- 2 eggs
- 2 slices bacon, grilled on one side
- 1 tomato, grilled on the other side
- American sauce (sauce Américaine)
Instructions
- Heat the serving plate. Arrange the four lobster escalopes on it. Break the eggs directly over the lobster, and cook until set. Surround the dish with a thin ribbon of American sauce.
- Alternatively, cook the two eggs in a skillet (à la poêle); slide them onto a hot plate. Garnish one side with two slices of bacon grilled on one side, and the other side with a tomato grilled on the other side.
