Cromesquis à la Française

Ingredients
- 70 grams prepared forcemeat or binding agent (appareil)
- flour
- pâte à frire (ordinary frying batter)
- oil or fat for deep frying
- parsley, fried
- table napkin (serviette)
Instructions
- Divide the prepared forcemeat (appareil) into portions of no more than 70 grams each. Shape these portions into rectangles on a work surface dusted with flour.
- When ready to serve, dip each rectangle into ordinary frying batter (pâte à frire), then plunge into very hot deep oil. Maintain the oil at high temperature to achieve a very crisp, golden exterior.
- Dress on a napkin, surrounded by or garnished in the center with fried parsley.
