Instructions

  1. Bake Holland potatoes in the oven. Scoop out the pulp and season it with salt and pepper. Sauté the potato pulp in butter in a skillet and mound it into a dome shape on the serving plate.
  2. Arrange the fried eggs around the potato dome. Before the egg white fully sets around the yolk, dust the yolk with a pinch of minced chives and allow the white to enclose it.
