Garlic Soup

Ingredients

Instructions

  1. In a pot, combine 2 litres of water, 20 small garlic cloves (140 grammes), 2 small sprigs of sage, 2 cloves, 25 grammes of salt, and a pinch of pepper.
  2. Bring to a boil, then simmer gently for a quarter hour.
  3. Meanwhile, dust 20 small slices of bread with grated cheese and pass them briefly in the oven to melt the cheese. Arrange the toasted bread in a soup tureen and dress with a thread of olive oil.
  4. Pour the broth over the bread, pressing lightly on the aromatics to extract their flavour. Allow the bread to soak for 2 minutes before serving.
