Salmon Steak Royale

Ingredients
- 1 salmon steak (darne)
- Sauternes wine
- aromatic vegetables (fonds d'aromates)
- crayfish tails (queues d'écrevisses)
- mousseline quenelles (fish farce)
- small mushrooms
- truffles
- potatoes
- Normandy sauce (Sauce Normande)
Instructions
- Braise the salmon steak in Sauternes wine over a bed of aromatic vegetables (fonds d'aromates).
- Garnish the braised steak with the following: bouquets of crayfish tails; small mousseline quenelles (light dumplings made from fish farce); small mushrooms; truffles cut into small olive shapes; and potatoes that have been scooped with a large round spoon and cooked English style (boiled in salted water).
- Serve the Normandy sauce (Sauce Normande) separately on the side.
