Instructions

  1. Braise the salmon steak in Sauternes wine over a bed of aromatic vegetables (fonds d'aromates).
  2. Garnish the braised steak with the following: bouquets of crayfish tails; small mousseline quenelles (light dumplings made from fish farce); small mushrooms; truffles cut into small olive shapes; and potatoes that have been scooped with a large round spoon and cooked English style (boiled in salted water).
  3. Serve the Normandy sauce (Sauce Normande) separately on the side.
