  1. Prepare the chicken consommé and bind it lightly with tapioca.
  2. Prepare three separate batches of chicken forcemeat quenelles (poached oval dumplings): the first batch enriched with finely chopped lean ham, the second with finely chopped truffle, and the third with finely chopped chives.
  3. Shape the quenelles into small cordons (thin strings) about the thickness of spaghetti, approximately 5 centimeters in length. Poach them à la minute (just before service).
  4. Ladle the bound consommé into serving bowls. Arrange the three types of quenelles in lines and garnish with peas and chervil leaves.
