Consommé à la Nilson

Ingredients
- chicken consommé
- tapioca
- chicken forcemeat quenelles (three types)
- lean ham, finely chopped
- truffle, finely chopped
- chives (ciboulettes), finely chopped
- peas
- chervil leaves
Instructions
- Prepare the chicken consommé and bind it lightly with tapioca.
- Prepare three separate batches of chicken forcemeat quenelles (poached oval dumplings): the first batch enriched with finely chopped lean ham, the second with finely chopped truffle, and the third with finely chopped chives.
- Shape the quenelles into small cordons (thin strings) about the thickness of spaghetti, approximately 5 centimeters in length. Poach them à la minute (just before service).
- Ladle the bound consommé into serving bowls. Arrange the three types of quenelles in lines and garnish with peas and chervil leaves.
