Grilled Salmon

Ingredients
- 1 medium salmon
- oil
- salt and pepper
- Maître d'hôtel butter or anchovy butter
Instructions
- Cut the salmon into steaks (darnes) of even thickness, aiming for pieces weighing approximately 200 grams each. Season with salt and pepper. Brush generously with oil. Grill over a high flame initially, then reduce to a moderate heat and continue cooking until the flesh is cooked through.
- Serve accompanied by maître d'hôtel butter (parsley and lemon butter) or anchovy butter.
