Consommé à la Marquise

Ingredients
- ordinary consommé (consommé ordinaire)
- celery fumet (fumet de céleri)
- veal marrow bones (amourettes de veau)
- poultry forcemeat quenelles (petites quenelles en farce de volaille)
Instructions
- Prepare a consommé ordinaire (clear, refined meat broth). Infuse it strongly with celery fumet (concentrated celery stock).
- For the garnish: Poach veal marrow bones (amourettes) in court-bouillon (aromatic broth with vegetables and herbs), then slice them into small rounds.
- Shape poultry forcemeat quenelles (dumplings) mixed with finely chopped hazelnuts into the size and form of small cookies. Poach these quenelles just before serving.
- Ladle the consommé into bowls and distribute the veal rounds and hazelnut quenelles evenly among the servings.
