Instructions

  1. Prepare a consommé ordinaire (clear, refined meat broth). Infuse it strongly with celery fumet (concentrated celery stock).
  2. For the garnish: Poach veal marrow bones (amourettes) in court-bouillon (aromatic broth with vegetables and herbs), then slice them into small rounds.
  3. Shape poultry forcemeat quenelles (dumplings) mixed with finely chopped hazelnuts into the size and form of small cookies. Poach these quenelles just before serving.
  4. Ladle the consommé into bowls and distribute the veal rounds and hazelnut quenelles evenly among the servings.
