Omelette à la Nantua

Ingredients
- 1 omelette
- 30 grams crayfish tails
- 1 spoon Nantua sauce (shellfish velouté)
- 2 crayfish tails, whole and large
- 1 slice truffle
- 1 ribbon Nantua sauce
Instructions
- Prepare a standard omelette. Fill it with the 30 grams of crayfish tails bound with a spoonful of Nantua sauce (shellfish velouté). Arrange two large whole crayfish tails on top of the omelette with a thin slice of truffle positioned between them in the center. Surround the entire omelette with a ribbon of Nantua sauce.
