Goujon à la Russe (Russian-Style Goujon)

Ingredients
- Goujons (small fried fish fillets)
- Court-bouillon (poaching broth) with white wine
- Mayonnaise collée à la gelée (mayonnaise bound with aspic)
- Parsley, finely chopped
- Small canapés
Instructions
- Poach the goujons gently in a strongly aromatic court-bouillon (poaching broth) made with white wine. Allow them to cool completely in the broth.
- Drain the goujons thoroughly and pat them dry with paper or cloth. Coat them evenly with mayonnaise collée à la gelée (mayonnaise bound with aspic gelatin).
- Dust lightly with finely chopped parsley and allow the coating to set.
- Serve as they are, or arrange each goujon on a small canapé of the same shape and dimensions.
