Goujon à la Russe (Russian-Style Goujon)

  1. Poach the goujons gently in a strongly aromatic court-bouillon (poaching broth) made with white wine. Allow them to cool completely in the broth.
  2. Drain the goujons thoroughly and pat them dry with paper or cloth. Coat them evenly with mayonnaise collée à la gelée (mayonnaise bound with aspic gelatin).
  3. Dust lightly with finely chopped parsley and allow the coating to set.
  4. Serve as they are, or arrange each goujon on a small canapé of the same shape and dimensions.
