  1. Prepare the macaroni mixture (appareil des palets): Cut the blanched fine macaroni into rings approximately half a centimeter thick. Mix with a firm béchamel sauce (sauce Béchamel serrée), bind with egg yolks, and add grated cheese.
  2. Spread the macaroni mixture in a layer about half a centimeter thick on a buttered baking sheet; allow to cool completely. Cut into small rounds the size of a dime (décime), then bread them by passing through beaten egg and very fine breadcrumbs. Shape and correct as needed.
  3. Fry the palets at the moment of service.
  4. Serve the clear chicken consommé in bowls, with the fried macaroni palets and grated cheese presented separately on the side.
